Easy No-Bake S'mores Icebox Cake

We're continuing our Schoolhouse Summer Camp, opens in a new tab series with a few of our favorite seasonal recipes. Next up on the menu — a dreamy no-bake dessert in an easy-to-travel package. Below, Schoolhouse friend, Alex, shares a simple recipe for her delicious s'mores icebox cake.

No Bake S'mores Icebox Cake

INGREDIENTS:

  • Chocolate pudding (used approx. 2 cups for one mason jar, but you can adjust the ratio to your desired taste)

  • Crushed graham crackers or butter cookies (any crunchy cookies will work!)

  • Marshmallow fluff

  • Any additional elements you'd like (cherries, chocolate chips, whipped cream, or anything else you enjoy)

DIRECTIONS:

  1. Crush up the cookies so you can form even layers.

  2. In a storage container with a tight fitting lid, layer cookies, pudding, fluff, and any other elements you have on hand.

  3. Keep chilled and let set for at least 12 hours before eating (can be made up to two days in advance).
